Resident Action = Community Empowerment

“Nanny’s Kitchen”runs a 12-week Food Justice Program for young people in Harlem, and Community members who want to make healthier, cost efficient, time effective decisions about the food they purchase and prepare for themselves and their families.

  •  Prep for food handlers license, culinary diploma and the ability to run their own kitchens.

  • The program builds knowledge,  skills, and relationships that empower young people  to contribute to the communities they Live, Work, and Play in.

  • The program ends with a Dinner Party for invited community leaders and Supportive Donors. Young people share their talents as cooks, and their ideas as food justice leaders.

 MEATBALLS WITH PRETZEL STICKS

  •  2 to 3 LBS. OF GROUND MEAT

  •  (TURKEY, PORK, BEEF, CHICKEN OR VEAL OR MIX & MATCH)

  • 1 EACH GREEN AND RED PEPPER MINCED

  • 1 MEDIUM ONION MINCED

  • 1 STALK OF CELERY MINCED

  • 6 to 10 SPANISH OLIVES MINCED OR SLICED

  • 2 CLOVES GARLIC MINCED

  • 1 TBSP EACH ONION POWDER, PAPRIKA, AND OREGANO OR TO TASTE

  • 1 CAN TOMATO PASTE

  • 1 EGG

  • 3 CUPS BROTH

  • THIN PRETZEL STICKS

  • 2 TBLS OLIVE OIL

 

  1. PLACE MEAT, EGG, OLIVES, TOMATO PASTE AND SEASONING IN A BOWL MIX WELL ADD A LITTLE WARM WATER TO HANDLE PASTE. SET ASIDE.  SAUTEE ONION, PEPPERS, GARLIC, AND CELERY IN OLIVE OIL SEASON WITH PEPPER, AND ONION POWDER COOK TIL TENDER REMOVE FROM HEAT AND LET COOL TO ROOM TEMP.MIX VEGETABLES, WITH MEAT MIXTURE AND MIX WELL MAKE INTO SMALL BALLS PLACE IN SINGLE LAYER IN GLASS BAKING DISH (FRYING PAN FOR STOVE TOP METHOD) AMOUNT DEPENDS ON SIZE OF MEATBALL YOU MAKE. POOR HALF THE BROTH OVER MEATBALLS.

  2.  OVEN METHOD:  BAKE AT 325 UNTIL LIQUID IS GONE TURN MEATBALLS AND ADD THE REST OF THE BROTH AND RETURN TO OVEN UNTIL BROWN AND FIRM.

  3.  PAN METHOD: BROWN MEATBALLS, ADD BROTH, COVER AND SIMMER FOLLOWING BAKING METHOD REMOVE MEATBALLS TO SERVING TRAY LET COOL

  4.   IN MEANTIME: TAKE REMAINING LIQUID AND MIX IN 1 TABLE- SPOON GRATED CHEESE AND ENOUGH STARCH TO MAKE A GLAZE WHEN MEATBALLS ARE COOL GENTLY INSERT PRETZEL STICK INTO CENTER OF MEATBALL DRIZZLE WITH GLAZE AND  SERVE.
